Lemon-peach pancakes. Three pancakes topped with glazed peaches and served with fresh fruit and cheesy grits.
Blackened salmon with pico de gallo, parmesan scrambled eggs, green onions, lemon caper butter and served with fresh fruit and fried potatoes
Fried egg Sunspot. Texas toast stuffed with a fried egg and topped with sautéed tomatoes, onions, spinach and bacon. Garnished with a jalapeño hollandaise and served with fried potatoes and a fruit salad.
Overstuffed burrito. Grilled tofu or scrambled eggs, black beans, sautéed onions and peppers and sweet potatoes and topped with red salsa, sour cream and served with fresh fruit and cheesy grits.
Cajun omelet. Filled with Monterrey jack cheese, scallions, tomatoes and topped with a crawfish Étouffée. Served with a buttermilk biscuit and fruit salad.
